WHere is a simplified interpretation of a drink featured on our latest cocktail list. This is a large-volume premix that's packed with tastes of a Christmas time, rendering it ideal for your celebration. Reserve the remaining cordial for brunch beverages, sweets, or for additional servings of the drink.

Makes enough for 10 people
To make the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Premix (yields 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Combine every components into a saucepan, bring to a light boil, mixing until the sugar dissolves. Then, take off the burner allowing it to cool down completely. Pour into a sealable bottle, seal and refrigerate it in the fridge, it can be stored for about a month.
For the Batch Mix: Pour the specified liquid ingredients into one sizeable container, leave to sit for one hour, then pass it through preferably using muslin, to ensure it's completely strained.
For serving: Add 85ml of your premix into a stirring glass packed with ice, and agitate carefully for about 60 seconds until cold. Pour into an cold coupe glass or a similar vessel, decorate with the cranberries and finish with a quick spritz of the essential oil above the glass.
